In Shakespeare's day, before the invention of fine ground mustard flour, the denizens of Tewkesbury pounded their mustard with grated horseradish to produce a tracklement for their roast beef. This horseradish mustard takes the hard work out of pounding and grating, and like the original contains no artificial colouring. It is equally good with ham and pork pies.
